  • 2 middle-sized carrots
  • 1 +1/2 cup shredded coconut
  • 1/2 cup almond butter
  • 46 Medjool dates
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Prepare the ingredients: finely grate 2 medium-sized carrots. Thoroughly wash the dates, remove the pits and mash them.
  2. In a bowl, combine grated carrot, 1 cup of shredded coconut, 1/2 cup of almond butter, mashed Medjool dates, 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, 1 teaspoon of ground ginger, 1/2 teaspoon of ground nutmeg, and 1/2 teaspoon of salt. Mix everything thoroughly with a spatula until the mixture is soft and pliable. If your carrots is extra juicy, you may need to adjust the consistency – just add about ½ cup more shredded coconut to give the mixture a firmer texture.
  3. Roll the mixture into small balls, then use the remaining 1/2 cup of coconut flakes to sprinkle over the raw bites. For a smoother coating, you can also dip each ball into a small bowl of shredded coconut.
  4. Place the balls in a container and refrigerate for 1 hour before serving. This allows the almond butter to firm up and the flavours to meld together.
